A featured recipe in the January 2021 Victoria & Circle Tour Art Calendar:
You will need:
- 300 grams of goat cheese
- 1 package Snowdon House Douglas Fir/ Tomato Seasoning blend.
- 1 bag of Snowdon House West Coast Bread Mix
- 1x 340 ml Club Soda or 1 bottle of Snowdon House Fir essence.
- 3 medium-sized beets
- 2 tbsp of olive oil
In a bowl, blend together 300 grams goat cheese and 1 package of Snowdon House Douglas Fir/ Tomato Seasoning blend. Mix well.
The longer this sits the better it gets. You can make it a day in advance and it freezes well.
Place 1 bag of Snowdon House West Coast Bread Mix in a bowl and add 1x 340 ml Club Soda or 1 bottle of Snowdon House Fir essence. Stir until well mixed.
Place in a well-greased loaf pan and bake in a preheated oven at 350°F for 45-50 minutes, until a tester comes out clean.
Place 3 medium-sized beets and 2 Tbsp olive oil in an oven-proof dish and cover with tin foil. Cook at 350°F till done, 45-50 minutes (test for tenderness).
When the beets have cooled enough to peel, slice them finely.
Slice the warm bread and lather with the goat cheese blend. Place sliced beets on top and enjoy your open face Fir-Wich!
